One of my husband’s holiday favorites is sugar-free keto pecan snowball cookies. These are so good and sugar-free and gluten-free, and you’d never know.
They are melt-in-your-mouth goodness. And they disappear very quickly! This recipe quickly became a Christmas tradition at our house. I follow the original recipe, except for just a few minor adjustments, to make it even more spectacular.
Sugar-Free Keto Pecan Snowball Cookies Recipe
The original recipe that I use is from The Diet Chefs, Keto Snowball Cookies.
What you’ll need or what I use:
1 cup Organic Pecans (not Walnuts).
1 Stick Salted or Unsalted Organic Butter
½ Cup Powdered Lakanto Sweetener (we do not like Swerve)
1 tablespoon Organic Coconut Flour
Just less than 1 ½ Cups Organic Almond Flour
1 teaspoon Pure Organic Vanilla Extract
Pinch of Redmond’s Real Salt
TOPPING:
⅓ Cup Powdered Lakanto Sweetener (we do not like Swerve).
