Keto Chicken Parmesan

This has become one of our top recipes, it’s gluten and grain-free, low-carb, Keto Chicken Parmesan. This is so delicious! And it is fairly quick and easy to make. I love using the air fryer for this recipe.

The Recipe

The original recipe is from the master wizard in the kitchen Maria Emmerich. Click this link to get the recipe Chicken Parmesan. But then come back and learn about how I tweaked it to make it over the top.

If you are a hunter for turkey or grouse, this recipe is great with those too. We made it with ruffed grouse before. YUM!

Use 4- 8 ounce boneless, skinless chicken breast, pounded to 1/2 inch thickness. I place parchment paper over them on a cutting board and pound out.

WET COATING:

  • 2 large eggs separated, at room temperature

DRY COATING:

  • 1/4 cup Pork panko crumbs crust pork rinds & 1/4cup powdered Parmesan cheese if not dairy free.
  • 2 teaspoons dried basil leaves
  • 1/2 tsp Redmond Real Salt
  • 1 teaspoon fresh Ground pepper

SAUCE:

1 jar Primal Kitchen Tomato Basil Sauce

OR Kathy’s Marinara Sauce:

1 Quart Easy Tomato Starter Sauce (subscribe to get this exclusive recipe, it is free, just sign up with your email to stay in the loop and verify your account).

5 Fresh Basil Leaves diced. Or 1 tsp dried Organic Basil

1 Tbsp Dried Organic Pizza Seasoning

2 Grated Organic Garlic Cloves

Warm up while chicken is in the Air Fryer!

I lay the chicken on parchment paper to cook. I think that is a typo for the degrees I cooked in the Air Fryer at 400 degrees. 10-20 minutes (depends on the size and thickness) until done. Flipping halfway through.

Once cooked we topped with more grated parmesan. Delicious!

*I skipped the water in the wet coating and only used eggs. And in the dry coating I used half of the pork panko crumbs and half of it was ground parmesan cheese. By adding the parmesan cheese, the coating then had a bit of a crunch to it. Then added my homemade marinara sauce.

Final Thoughts - Keto Chicken Parmesan

Kathy’s (me) Homemade Marinara Sauce really made this recipe. Even my hubby who is not a solid fan of chicken, loved this recipe. And he even ate the leftovers, he’s not a fan of those either. The fresh basil adds so much!
