One of our favorite dishes to make in the summer when cucumbers are fresh from the garden is creamy cucumbers. It’s a great way to use some that have grown a little larger than you’d like for pickling them. The perfect pairing of sweet (that doesn’t spike your blood sugar), sour and creamy goodness!
Most of my life I never actually had a measured recipe for this dish. So, for you all my fabulous readers I created the recipe guide. Now I say guide because if you like it sweeter, add more sweetener, if you like it more sour with that kick, add more vinegar.

Creamy Cucumber
Ingredients
- 8 Medium Cucumbers.
- Real Salt
- Dressing ingredients:
- 1 Cup Primal Kitchen Mayo made with Avocado Oil. Use link and coupon 360WELLNESS to get 10% off.
- 1 Tbsp Lakanto Granulated Monk Fruit Blend Sweetener
- 2 Tbsp Organic Apple Cider Vinegar with the Mother
- Ground Organic Gourmet Pepper
Instructions
- Peel each cucumber. I was gifted a Cutco peeler, you need one. You can peel with it going both ways. Backwards and forwards for faster peeling.
- slice each cucumber.
- As you add a layer to a medium bowl sprinkle your Real Salt on the top of each layer.
- After all the cucumbers are added to the bowl while layered with Real Salt. Cover and refrigerate 30 minutes-1 hour or overnight even works.
- Dump into a strainer and rinse very well. The salt pulls out the moisture, so your salad doesn't get runny. It will look like the picture.Make Sure to taste test so the slices are not too salty. If they are, keep rinsing. then let drain.
- While the cucumbers are draining, mix your dressing ingredients in the bowl.
- Taste test now to see if you want it sweeter or more vinegar for the sour taste. (Add one more of whichever one you prefer). I tend to like lots of vinegar right before it takes your breath away
- Add Cucumbers and mix.
- Add a healthy amount of fresh ground gourmet pepper, like in the picture. I don't measure as it is fresh ground.
- Mix well.It is always better to eat it after it can sit for 30 minutes – 1 hour for the flavors to blend.Keep refrigerated!

This will vary depending on how much sauce you are eating. I feel these are on the high end since there is always uneaten sauce leftover in the bowl when finished.
