Keto Anti-Pasta Salad
If you or your family loves salads you’ll want to try this Keto Anti-Pasta Salad. It’s delicious and very easy to make. It’s great for picnics or when you need to bring a dish to pass. Especially if you know that dishes there will contain pasta and you can’t eat that.
Our family especially loves this in the summer time when you can get fresh cucumbers, red peppers and cauliflower. In fact that is how this salad was born. And you’ll never miss the pasta. Feel free to add in and substitute for your favorites.

Keto Anti-Pasta Recipe;
1 large head of cauliflower cut small (about 4 cups)
1 large English Cucumber or 2 regular diced
1 large red Bell Pepper
1 – 8oz Pepperjack Cheese Cubed
1 Can of whole Black Olives
8oz of Salami of your choice cubed or cut small
2 Bottles of Primal Kitchen Italian Avocado Oil Vinaigrette & Marinade
Prepare ingredients and put in a large bowl, add Italian dressing and mix. It is best it made several hours in advance or a day ahead. Refrigerate. Stir as it sits and before serving.
Depending on how big your veggies are will vary the calories, carbs and how much dressing in each scoop.
Makes approximately 10 cups.
1 cup equals approximately 369 calories & 5 carbs, 34 g Fat and 11 g Protein.
