Delicious Sugar-Free Sugar Cookies
I have tried many recipes out so that you do not have to. And what I found is this one is by far the best and the most like traditional sugar cookies. They make great cut-out cookies. This Delicious Sugar-Free Sugar Cookies is by the wonderful Maria Emmerich.
I have feed these to many people and they have enjoyed without even knowing they were healthier version for them. They taste exactly like a regular flour-based sugar cookie, but they are not!
I do not change this recipe other than some ingredient brands; I prefer Lakanto Sweetener. And I double it usually.
HOT TIP: dust your surface with Lakanto Sweetener before rolling out your cookie dough.
Do not use any flour on the rolling surface even when making flour-based cookies. Using powdered sweetener (sugar) instead makes them so much yummier for every recipe! I’ve been doing this tip for over 20 years.
I am also still working on perfecting a different frosting. I’ll be testing it out again in the next week or so. if it is perfect, trust me I will post it! However, for now, the frosting is good in the recipe too.
If you prefer more of a Royal Icing that is part of a gingerbread house post of Maria’s. It just depends what type of frosting you prefer. I would love to hear in the comments if you prefer a softer frosting or a one that hardens up on your sugar cookies?
Final Thoughts
Basically, just give this recipe a try. Make a single batch just to test it. I like a softer cookie, so I leave them thicker, but you do what you prefer.
If you have littles in your life, get them in the kitchen to help. And since they are sugar-free they won’ be all wild on the sugar when you are done. Your kitchen will still be a mess most likely, but you will have made precious memories!
